Spinach Salad

This spinach salad is served with a sweet and tangy homemade salad dressing.

INGREDIENTS:

  • 1 package fresh spinach
  • 3 boiled eggs, chopped
  • 1/2 cup toasted almonds
  • 3 slices bacon, fried and crumbled (I used turkey & more than 3 slices)
  • 1 can drained bean sprouts (optional)
  • chopped mushrooms (however many you want)
  • 1 cup oil
  • 3/4 cup sugar
  • 1/3 cup catsup
  • 1/4 cup vinegar
  • 2 small bunches chopped shallots
  • 1 tablespoon Worcestershire sauce

PREPARATION:

Toss salad ingredients (first 6 ingredients) and chill. Prepare dressing (next 6 ingredients) in advance, but do not pour over greens until serving time.

*Note: We just added the amount of dressing that we wanted to the salad as we ate it. We mixed it up in a jar. - Charlotte
