PREPARATION:My mom always makes a Sweet Potato Souffle which we all just love. Mash the sweet potatoes like mashed potatoes with butter, milk, salt and pepper; add spices such as nutmeg. Put them in a long casserole dish and place large marshmallows on top. Bake in the oven at 350 degrees just until the marshmallows are a golden brown (about 5 to 10 minutes).
