Sweet Potato Souffle

Made with fresh sweet potatoes and topped with marshallows, your family will love this Thanksgiving side dish.

INGREDIENTS:

  • 4-6 fresh sweet potatoes, boiled until tender
  • 1/3 to 1/2 cup milk
  • margarine, to taste
  • salt and pepper, to taste
  • 1 teaspoon nutmeg, or to taste
  • marshmallows

PREPARATION:

My mom always makes a Sweet Potato Souffle which we all just love. Mash the sweet potatoes like mashed potatoes with butter, milk, salt and pepper; add spices such as nutmeg. Put them in a long casserole dish and place large marshmallows on top. Bake in the oven at 350 degrees just until the marshmallows are a golden brown (about 5 to 10 minutes). My mom keeps the door open a crack to the oven to keep an eye on them. The marshmallows brown quickly. - Autumnleave
