Yogurt Mashed Potatoes

Yogurt adds a different touch to these mashed potatoes.

INGREDIENTS:

  • 4 medium potatoes, peeled
  • 1/2 cup plain lowfat yogurt (not fat-free)
  • 6 tablespoon milk (warmed slightly in the microwave)
  • 1 1/2 tablespoon butter
  • salt and pepper to taste

PREPARATION:

Cut peeled potatoes into quarters. Place potatoes in large pot and cover with water. Cover. Cook potatoes over medium heat until soft. Drain potatoes.

Mash potatoes with a potato masher. Add yogurt, butter and a little of the milk.

Beat with an electric mixer. Gradually add remaining milk until desired consistency. Salt and pepper to taste.
